This is the same delicious recipe we use to make our high protein, low glycemic donuts from SunFlour Pancake & Waffle Mix! You can also make these from scratch with SunFlour using our Keto Chocolate Dipped SunFlour Donut recipe!
Yields: 6-12 mini bundt cakes (depends on size pans you use or how high you fill)
Batter Ingredients
1 bag SunFlour Pancake & Waffle Mix (298 grams or 2 1/3 cups mix)
4 eggs
½ cup low-fat or non-dairy milk
4 tsp oil (or melted butter)
Directions
1) Preheat oven to 350 degrees Fahrenheit.
2) Whisk together eggs, butter, and milk. Stir in bag of Pancake Mix.
2) Liberally spray mini bundt pans with oil and pour batter about 80% full.
3) Drop in other inclusions (like chocolate chips) as desired.
4) Bake for 15 min. until golden brown or until firm to the touch.
5) Remove mini cakes from pans and cool on rack for 30 minutes before serving or dipping.
6) Top as desired—dust lightly with your favorite sweetener, drizzle with icing, dip in chocolate, or eat them without!
Chocolate Dip
1) Put 2½ ounces dark chocolate chips and ½ ounce cocoa butter in small sauce pan.
2) Heat on low, stirring until a chocolate liquid forms.
3) Dip half of the donut in chocolate liquid and place on parchment paper (non-dipped side down).
4) Optional: Freeze for 15 minutes to harden chocolate dip.
Options for Peppermint Chocolate Dip
1) Add 1 tsp peppermint extract to wet ingredients
2) Add ½ tsp peppermint extract to chocolate dip
3) Break up candy cane and sprinkle onto dipped end of donut
