
Biscuit Recipe (yields 4 biscuits, 8 servings) *see macros below
Ingredients
1 1⁄4 cups SunFlour
2 tsp double acting baking powder
1 Tbsp your preferred sweetener*
2 Tbsp unsalted butter
1 large egg
1⁄4 cup sour cream (or coconut yogurt for dairy free)
½ tsp vanilla extract
1 pint fresh strawberries for topping, sliced
preferred whipped cream for topping
*Note: if you use sweetener, it will be important to use a form to give shape to the biscuits; otherwise, the sweetener will cause them to spread out like large cookies. you can skip the sweetener if you choose to do drop biscuit method. The recipe is plenty sweet!
Directions for Biscuit Making
1. Preheat oven to 350 degrees.
2. Whisk SunFlour, baking powder and sweetener together. Sift for best results.
3. Cut butter into flour mixture with a food processor, pastry tool, or fork/knife, ensuring it is evenly distributed.
4. Mix egg and sour cream together.
5. Mix flour mixture and sour cream mixture together with a spatula.
6. Line cookie sheet with parchment paper.
7. Use scoop to drop 8 rounded balls of biscuit dough (or 4 if you want to slice them in half). We recommend flattening the tops for this recipe or, use small metal forms to get desired shape.
8. Bake at 350 degrees for 15-18 minutes, until golden brown. Cool on cooling rack. They freeze really well if you’re into doing batch baking and freezing!
Directions for Topping
We like to keep it simple and add freshly sliced strawberries to the top with a sprinkle of sweetener and a dollop of whipped cream.
It’s also a delicious option to slice up fresh strawberries, mix them with 1 Tbsp of your sweetener of choice and refrigerate. Then, pour it over the biscuit.
If you want to make a larger and more impressive dessert, you can use both halves of the biscuit and alternate layers with the marinated strawberries and cream. For a multi-level strawberries, biscuits and cream experience!
