*Keto *Low Carb *High Protein *Grain Free *Gluten Free *(Nut Free)
Here’s a delicious muffin recipe you can easily make from-scratch using SunFlour or our Muffin Mix. This is the keto SunFlour version but you can also find the link below for how to make it with our mix.
Our new Carrot Cake Muffins are ultra-moist, delicious and amazingly filling!
They embrace all the delicious flavors and fluffy texture of carrot cake that you love. But with our SunFlour recipe, they’re full of protein, fiber and cinnamony sweetness while keeping the carbs and sugars low.
You’ll notice that some of them are topped with nuts, some with seeds, some with shaved carrot and some with a dollop of dairy.
This recipe can flex to your taste buds, any food sensitivities you or your family may have and whatever is in the pantry. In one muffin pan, you can have lots of different variations!
If you like the idea of a delicious dollop or soft frosting on top, we have a few ideas for you:
Want a simple dollop?
🥕In the photo above, we mixed together a bit of sheep yogurt and cream cheese with cinnamon. Why that combo? It’s what we had in the fridge. What amounts? We really don’t know. Yup, that’s how we roll sometimes…
🥕A similar recipe is what we use on our Keto Carrot Cake Waffles. Mix 1/2 cup cream cheese with 1 tsp honey and 1/4 tsp cinnamon. It adds only a fraction of a carb to your muffin.
Want it dripping in frosting?
🥕Skip the nuts, seeds and carrot on top and use the frosting we created for our Layer-cake version of Keto Carrot Cake Waffles (cream cheese + heavy cream + butter + vanilla + sweetener).
🥕Or, go a bit lighter with our Basic Frosting recipe (butter + powdered sugar or alternative + milk; you can add flavoring or extract you prefer but it’s not necessary).
Can’t do the dairy?
🥕You can use vegan yogurt and cream cheese or there are many different kinds of packaged frostings that are dairy free.
🥕Our Basic Frosting recipe can be modified using non-dairy butter and milk.
🥕If you don’t have to avoid nuts, Coconut Butter is a great (and really healthy) alternative to the dairy dollops or frostings. Use it plain or mix it with a bit of honey or orange juice to thin it out a bit. You can get several flavors that would be quite delish with these muffins (we’re fond of Naked Coconut and Toasted Coconut flavors by Coconut Kitchen).
Yield: 8 muffins (73g) *see macros below
Dry Ingredients
2 cups (200g) SunFlour
¼ cup your favorite zero calorie sweetener (we used pentose)
1½ tsp baking powder
¼ tsp salt
½ tsp cinnamon
¾ cup walnuts (or a mix of pumpkin & sunflower seeds)
¼ cup dried raisins
Wet Ingredients
3 large eggs (or 4 medium)
½ cup sheep yogurt (you can sub sour cream, another yogurt or non-dairy sour cream)
1 tsp vanilla extract
½ cup shredded carrots (make a bit extra if you want to use for topping)
Directions
1) Preheat oven to 350 degrees F.
2) Whisk eggs until frothy and increase in volume (a few minutes).
3) Add wet ingredients and mix until blended.
4) Add dry ingredients (save some seeds, walnuts, raisins or shredded carrot for topping the muffin). Mix until blended.
5) Fill batter into 8 paper muffin liners and add the seeds, etc. to the top.
6) Bake 30-35 min or until firm and browned (you can do extra 3 min. on convection to get beautiful browning).
7) Cool in pan for 10 minutes then transfer muffins to cooling rack.
8) Sprinkle with cinnamon, frost or dollop once cool. Enjoy!
Storage: store loosely covered at room temperature for a few days (if you top with dairy, do the fridge or freezer, instead. They freeze and defrost really well, even with the dollops!
