Yield: 6 scones (83g) *see macros below
Dry Ingredients
2 cups SunFlour
1 Tbsp Bocha Sweet (or your favorite low glycemic sweetener)
2 tsp baking powder
¼ tsp fine sea salt
¼ tsp rosemary
¼ tsp black pepper
1/8 tsp thyme
Wet Ingredients
½ cup chopped ham
½ cup shredded cheddar cheese (thick shreds)
2 Tbsp chopped green onion
2 Tbsp cold butter
1 egg
3 Tbsp chicken or beef broth
Directions
1) Preheat oven to 325 degrees F.
2) Combine dry ingredients.
3) Cut in butter using a pastry cutter or put in food processor and bring together until butter is pea sized in the flour.
4) Whisk wet ingredients and mix with dry ingredients until a dough forms.
5) Add in ham, cheese and chives.
6) Press dough out on a SunFlour-dusted cutting board and form an 8″ long rectangle about 4″ wide (3/4 – 1″ thick). Cut into thirds, then cut thirds in half to form 6 triangles.
7) Place scone triangles onto parchment-lined cookie sheet and bake 30 min or until lightly browned. (Optional: sprinkle extra rosemary and/or chives on top before baking).
8) Remove to cooling rack. They are delicious hot or cold!
