*Keto *Low Carb *Grain Free *Gluten Free *(Nut Free)
Many of our from-scratch bakers wanted to make biscotti out of SunFlour instead of using our Pancake & Waffle Mix or our SunPower Bar & Cookie Mix.
Well, we can’t blame them. We are all in when it comes to finding more ways to get biscotti out of the oven!
Yield: 14 biscotti (1/14 of recipe) *see macros below
Dry Ingredients
2 cups SunFlour
1/3 cup your favorite low glycemic sweetener
¼ cup cocoa powder
1 tsp baking powder
¼ tsp fine sea salt
½ tsp xanthan gum (can substitute 1 Tbsp coconut flour)
¼ cup dried cranberries (sugar free)
optional: ¼ cup chopped pecans
Wet Ingredients
1 Tbsp fresh orange zest
1 egg
¼ cup melted butter
½ tsp vanilla extract
1 tsp orange extract (be sure if you use oils instead of extract that you use far less!)
Chocolate Dip Ingredients
2½ ounces dark chocolate chips (sugar free)
½ ounce cocoa butter
Directions
1) Preheat oven to 350 degrees F.
2) Mix dry ingredients together.
3) Mix wet ingredients together.
4) Combine dry and wet mixtures until dough forms. Work into a smooth ball.
5) Place dough on parchment-lined cookie sheet and lightly dust with SunFlour. Form the dough into a 9” x 4” rectangle. Smooth out edges and top with knife.
6) Bake for 40 minutes.
7) Cool for 30 minutes.
8) Cut ¾” slices with serrated knife and lay flat on parchment-lined cookie sheet.
9) Bake on 1 side for 10-15 minutes; then turn and bake another 10-15 minutes on other side.
10) Let cool 20 minutes. Eat naked or dip in chocolate!
Instructions for Chocolate Dip
1) Put chocolate chips and cocoa butter in small sauce pan.
2) Heat on low, stirring until a chocolate liquid forms.
3) Dip half of biscotti in chocolate dip and place on parchment paper.
4) Freeze for 15 minutes to harden chocolate dip.
Options for Peppermint Chocolate Chip
1) Add 1 tsp peppermint extract to wet biscotti ingredients
2) Add ½ tsp peppermint extract to chocolate dip.
3) Break up candy cane and sprinkle on top of dipped end of biscotti.
