
Yields: 8-12 servings
Ingredients
2 cups SunFlour
1/2 cup tapioca starch
1/2 cup potato starch
1/2 tsp sea salt
2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg
3/4 cup coconut palm sugar
4 eggs
1/4 cup butter, melted
6 ripe bananas, mashed well
optional: 1/2 cup chocolate chips, 1 cup raisins or 1 cup walnuts
Directions
1. Pre-heat oven to 325 degrees Fahrenheit.
2. Optional: In a small bowl, soak raisins in hot water for 15 minutes. Drain and set aside.
3. In a medium bowl, whisk the SunFlour, tapioca starch, potato starch, salt, baking powder and spices together.
4. In a large bowl, whisk the sugar, eggs, and butter together. Mix in the bananas (walnuts, chocolate chips and raisins).
5. Whisk the dry ingredients into the wet and stir to combine.
6. Pour batter into a loaf pan sprayed with non-stick cooking spray.
7. Bake until center is firm and springs back when pressed, about 30 minutes.
8. Cool, serve, and enjoy!
