High protein, low carb & delicious bread and muffins made from our Pancake & Waffle Mix!
Yields : 30-36 mini muffins or 10-12 regular sized muffins or 1, 9″ X 4″ bread loaf
Ingredients
4 eggs
1 Tbsp oil
1/3 cup rice milk or other milk
¼ cup pumpkin puree
1 Tbsp maple syrup
1 bag SunFlour Pancake & Waffle Mix
½ tsp pumpkin pie spice mix or cinnamon spice blend
½ cup mini chocolate chips (we prefer non-dairy Enjoy Life chips)
Directions
1. Mix wet ingredients with whisk until thoroughly blended.
2. Pour in 1 bag SunFlour Pancake & Waffle Mix & pumpkin pie spice mix or cinnamon spice blend – Cinnamon helps with promoting a healthy blood sugar.
3. Fold in mix & pumpkin pie spice with spatula until batter is smooth; add chips.
4. Spray muffin/bread pan with oil (for this recipe, this works better than using muffin papers like we recommend when using our muffin mix).
5. Fill muffin wells full of mix (optional: dash cinnamon on top).
6. Bake: for mini muffins, bake 23-24 min. For full-sized muffins, bake 30 min at 350 degrees F in a conventional oven until golden brown. For bread, bake 45 min- 1hr. until top is firm to touch and golden brown.
