Like so many other recipes we share, SunFlour crêpes are really versatile! They can be eaten for breakfast, lunch, brunch, dinner and even snacks and dessert. Plus, there are so many filling and topping possibilities!
Yield: 7 crêpes (depends on size you make them)

Ingredients
1 cup SunFlour Pancake & Waffle Mix
2 eggs
1 tsp melted butter or oil (we prefer melted butter to impart flavor)
½ cup non-dairy or other milk (we prefer rice milk to avoid dairy and nuts)
Directions
1. Mix the wet ingredients with a whisk until thoroughly combined.
2. Pour in SunFlour Pancake & Waffle Mix and fold in with spatula until batter is smooth. Do not over-mix.
3. Heat a lightly oiled 9″ skillet (medium heat).
4. Cover the bottom of the skillet with a thin layer of batter and cook until bubbly on top (you can make them very thin or moderately thin depending on your preference).
5. Flip with spatula and cook for another minute until lightly browned.
6. Transfer to cooling rack (or directly to plate if serving hot).
7. Fill and top as you like!
Filling & Drizzle Topping Options
Crêpes can be filled with a variety of ingredients. They can easily be made sweet or savory depending on your palate, what’s in your fridge, and what meal you’re planning.
Sweet ones are often adorned with fruit, a dusting of powdered sweetener, or some kind of syrup, jam, chocolate sauce, or whipped cream… and then stuffed with more fruit and soft cheese. Dessert crêpes are even topped with ice cream! When it comes to sweets, we like to keep it simple. Our favorite sweet crêpes are filled with 1/2 cup creamy/spreadable goat cheese (or non-dairy soft cheese) and 1/2 cup frozen or fresh blueberries. And sometimes a bit of agave, honey or stevia if we want it more sweet. We are also in love with bananas, soft cheese and a bit of chocolate drizzle.
Savory crêpes often include things like cheese, bacon, spinach, asparagus mushrooms, ham, or lox. Scrambled eggs may fill the crepes or be served as a side. Our favorite savory crêpes are filled with creamy/spreadable goat cheese (or a non-dairy soft cheese), lox and red onions. And topped with capers and a squeeze of fresh lemon or a lemon caper sauce.
Pretty much anything goes! It makes family time easy because everyone can get what they want.
You can roll them up with all the fillings inside (leaving the ends open or tucking them in). Or, you can fold them (in halves or quarters) like the French more typically do. Really, it’s all up to you!

Pumpkin Stuffed Crêpes
Stuff your crêpes with a filling made of pumpkin puree, cream cheese (soft goat cheese or a non-dairy soft cheese), a bit of vanilla, a bit of your favorite sweetener and pumpkin spice. Then add some nuts or pumpkin seeds for a perfectly autumnal experience!
SunFlour Crêpes work if you’re Keto!
If you’re using our SunFlour-based Pancake Mix, you get much better nutrition (lower carbs and sugar, more protein, fiber and healthy fat) than standard pancakes, waffles and other crêpes… but it was not designed to be specifically for keto or highly carb-restricted lifestyle diets.
Here’s the exception….. if you’re using it to make crêpes, you get even fewer carbs and calories per serving. So if you’re on a keto diet, you can have SunFlour crêpes using our pancake mix without disrupting your daily macros!
With this super thin pancake, there are only 8 net carbs… making it acceptable for keto meal replacement. Let’s break it down:
1 serving = 1 crêpe = 50g
8g net carbs = (10g carbs – 2g fiber)
Protein 6g
Fat 7g
Calories 130
Adding more egg and milk would lower the carbs/serving even more!
Of course, your choice of fillings, whether you’re having them as a snack or meal, and how thin you make them can all help to balance out the macros, too.
Note: For many of our mix-based recipes, you can substitute a from-scratch SunFlour recipe. This is one recipe where we do not recommend just subbing the batter of our from-scratch-with-SunFlour Keto Pancake Recipe. At a minimum, the recipe would call for more egg and we have not tested it well enough to give good guidance.
